Genome-edited tomatoes, with about five times the gamma aminobutyric acid (GABA) level of traditional ones, are now grown commercially in Japan. GABA reduces human blood pressure and induces relaxation. After government approval in May 2021, Tokyo-based Sanatech Seed Company has ventured into this business. Its Chief Technology Officer Professor Hiroshi Ezura shares the story of its journey.
